I've been trawling through the archives, and found some old recipes which I'll post up here over the coming days. Here goes with the first: Advocaat.
More of a pudding than a drink...
- 5 Eggs
- 125g White caster sugar
- 250ml Brandy
- Small pinch of salt
- Half a vanilla pod
Beat the eggs, sugar and salt together in a large bowl. Scrape the seeds out of the vanilla pod and beat these in. Stir in the brandy.
Place the bowl over a pan of gently simmering water and beat gently until the mixture thickens. It should have the consistency of custard.
Allow to cool, stirring occasionally.
It will set just like custard does, so serve with a spoon. I doubt this has the longevity of industrial advocaat, but should keep in the fridge for a little while.
